I am having a rather more domestic night than I generally have!

While at the grocery store, my dad noticed that chicken breasts were on sale, and sort of goes, "Do you eat chicken? I mean, would you cook it?" I kind of had to parse that one out, but I gathered that he meant, "Would this get eaten, or would it rot in the fridge?" At my answer of, "I can make chicken broth with it for soup! And have meat to make chicken salad!" it went into the cart.

Home now. Had to start a fire (because the heater is being annoying) before I could start cooking, but at 7pm I started the chicken broth. At 7:30pm I achieved simmering. :)

Schneider Family Failproof Chicken Broth Recipe (by which I mean, I think my dad adapted it from something he read in Cook's Illustrated).

Ingredients:
-Chicken, if whole, quarter it, if not parts are good too!
-Herbs you find yummy (I used Rosemary and Thyme because they were at hand)
-An onion, chopped into large sections (I might have only cut it into 6 pieces)
-water

Recipe:
Put chicken in stock pot and cover with water. Add an extra quarter of an inch for it to boil off. Add onion and herbs. Stir a little (by which I mean, moisten all the herbs that want to float, and poke at the onion until some of the layers come apart). Bring to boil. IMMEDIATELY turn heat down to low (as low as you can) so that the water is simmering with bubbles barely breaking the surface. Simmer for two hours, uncovered. Make sure to keep an eye on the liquid level, but that's why you put in a little bit extra. After two hours, remove from heat. Remove chicken (I like to have a colander handy for this), strain out onion and herbs. Store or eat!

I also achieved dinner in that time. I am happily nomming away at a frito pie (and I appear to have missed my chili estimate on it by exactly two bites worth). It would be better with cheddar cheese and avocado, but it's freaking delicious anyway, and I have leftovers for lunch.

My frito pie is so much better than theirs! (Or at least, I like it better the way I make it than the way they make it.) Their food is super good, though. I ♥ their quesadillas. Nomnomnom.

I never ate the frito pie there. Beans and my IBS are not friends. I just miss that place and I know they're big on frito pie. I think I miss Downtown Sub the most.

When I leave I miss Horseman's Haven the most, even though I don't actually go there that often. It's just the lure of their chile.

Frito pie is an awesome new concept which I have never previously experienced.

But now I want chili. Specifically, Chili Burgers. Darn.

When I come to visit (possibly this summer, depending on what mom says) I will make you a frito pie. It's truly nomful.
